From Chiapas, very Southern Mexico. Pacific air currents hit the first range of the Sierra Madres for ideal growing conditions. The "Finca" we work with; El Chorro, Jim most recently visited in late 2009. Here; under three levels of shade grow Typica, Bourbon, and Catuai varieties of Arabica. The farm hosts multiple species; blue magpie, tepezcuintle, and toucans among others. Mexican Altura Chiapas El Chorro makes a great stand alone varietal and is quite versatile as we use this in many of our blends.
