Roaster Tasting Notes:
The farm of Yader Vladimir and Karen Salgado is located in one of the prime coffee cultivating regions of Jinotega, Nicaragua. Yader and Karen’s two sons, Jesus and Elvin, help to grow their parents’ coffee. The unique microclimate where the farm is located is due to the extreme altitude. Because of this the coffee beans are harvested a whole two months later than the rest of the country. This longer, slower maturation of the coffee beans allows for more nutrients to be absorbed from the soil, this gives the coffee unique and complex notes on the cupping table.
