Roaster Tasting Notes:
aragogype beans (known for their size) and the Pacas, named after its discoverer Don Alberto Pacas. Pacas is known for its high yield intensity. The size of these Pacamara beans are huge to say the least. The Pacamara beans come from a special place within Santa Marta known as "El Manguito" ("The Small Mango Tree"). It lies at the highest elevations (4,850 feet) and represents a unique microclimate within the property. This area of just 57 acres (23 hectares) is dedicated to the special Pacamara coffees. The cup is remarkable. In a word? Splendid. Cupping notes are very complex with bright flavors of citrus moving back and forth between grapefruit and orange; berry, El Maguito, and an underlying cocoa taste that balances perfectly with the citrus. This is a strong coffee with a pleasant and long aftertaste. We roast it to a city roast; being careful to retain and highlight the acidity and grand complexity of the coffee.
