Roaster Tasting Notes:
This natural-processed Brazilian coffee is rare and limited in availability due to the fact that it's tree-ripened. In other words, the coffee cherries are left on the tree and allowed to over-ripen, resulting in a raisin-like appearance.
At harvest, instead of being hand picked by manual labor, it is one of the few arabica bean coffees that is harvested by mechanical equipment.
The beans are sun-dried in their own fruit, which imparts a wide array of flavors into the bean.
The aroma is nutty, with a note of caramel.
And the flavor?
Well....there's a ton of it! Two words describe it's extremely rich flavor best...
Chocolate and Raisins.
